Surprisingly delicious cookies. Not too sweet, but tasty enough for any occasion. All children love these special treats. Sometimes I sprinkle the tops with a lemony glaze. Ingredients:
3/4 cup sugar |
3/4 cup butter (softened) |
1 egg |
1 1/4 cups grated raw carrots |
2 cups sifted flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 teaspoon vanilla |
1/2 teaspoon lemon extract |
Directions:
1. Cream together sugar and butter until light and fluffy. 2. Add egg; beat well. 3. Stir in carrots. 4. Sift together dry ingredients in a separate bowl, then stir into carrot mixture. 5. Add vanilla and lemon extracts. 6. Drop dough by teaspoonfuls onto lightly Pam-sprayed cookie sheets. 7. Bake in 375* oven for 15 minutes or till light golden brown along edges. |
