Goat Cheese With Garlic And Herbs |

Herbed cheese, delicious on a radicchio and watercress salad with french bread. Can even be briefly broiled and added to cold greens to slightly melt the cheese into the greens. Ingredients:
1 log of montrachet cheese (11 ounces) |
1 cup of olive oil |
4 large garlic cloves coarsely chopped |
1 tbsp of snipped chives |
1 1/2 tsp of fresh thyme leaves |
1 1/2 tsp of fresh basil leaves |
1 tsp of dried rosemary |
1 crumbled bay leaf |
fresh ground black pepper, several grinds |
lemon zest threads, about 1/2 lemon |
sharp bitter greens, endive, radicchio, watercress mix |
slices of toasted french bread |
sparse sprinkle of balsamic vinegar for each plate |
Directions:
1. Slice the cheese into 1/2 inch disks and place them in a wide-mouthed glass jar. 2. Combine the rest of the ingredients *up to the greens* and pour over the cheese to cover it completely. 3. Allow to sit for 3 days. (I keep it refrigerated) 4. Serve herbed cheese at room temperature on top of a bitter green salad, drizzled with a bit of the best balsalmic vinegar and slices of toasted french bread on the side. |
