Goat Cheese Smashed Potatoes |

These rustic potatoes go well with any main course. Ingredients:
3/4 pound small red potatoes |
2 1/2 ounces soft mild goat cheese |
1 tbsp. unsalted butter |
1/4 tsp. fresh lemon juice, or to taste |
1/3 tsp chopped fresh thyme (optional) |
Directions:
1. In a saucepan cover potatoes with salted cold water by 1 inch and simmer, covered, until tender - 2. 15 to 20 minutes. 3. Reserve 1/4 cup cooking liquid and drain potatoes. 4. Return potatoes to pan, and with a fork, mash together with reserved liquid, the remaining ingredients, and salt and pepper to taste. |
