3 cups mashed potatoes |
1 1/4 cups milk |
1/3 cup crumbled goat cheese |
1/3 cup chopped smoked salmon |
1 tablespoon chopped fresh dill |
1/4 teaspoon pepper |
2 tablespoons butter |
Directions:
1. In a medium saucepan, combine potatoes and milk. Bring to a boil over medium high heat and cook, stirring, until smooth, about 3 minutes. 2. Off heat, beat in goat cheese, smoked salmon, dill and pepper. 3. In a large skillet, melt butter. Shape potato mixture into 6 patties 1/2 inch thick. 4. Cook over medium-low, turning once, until golden brown on both sides, about 6 minutes total. Serve hot. |
