This is a popular recipe from Bed and Breakfast's everywhere! One of my cousin's owns an Inn up in the N.C. Mountains and this recipe is very close to her's. Ingredients:

walnut,olive or canola oil |
6 eggs |
1 1/2 c. all purpose flour |
1 tsp salt |
1/2 tsp. black pepper |
1 tsp. thyme |
pinch of nutmeg |
2 c. milk |
1/2 c. heavy cream |
4 oz. herbed goat cheese, diced |
Directions:
1. Preparation: 2. Preheat oven to 375 degrees 3. Brush muffin tins with oil. Place the eggs, flour, salt, pepper, thyme and nutmeg in a blender, blend until well combined, scrape down sides. With machine running, slowly pour in the milk and cream. Blend until smooth. Place muffin tins in oven to warm. Remove tins and fill halfway with batter. Place a piece of the cheese in the center of each cup. Pour in the remaining batter to fill each cup 2/3. Bake the popovers until puffed and golden, 30-40 minutes. |
