I ate this last week and can't believe how good and yet how simple it is. Could be used as an appetizer, a side dish or, if you make enough, a main vegetarian meal. Very attractive too! Ingredients:
4 long, sweet /mild red or yellow (preferable, for color) or green banana paprika peppers, as shown in photo |
16 heaping tbs. soft, delicate goat cheese from your local deli |
about 1/2 cup toasted pine nuts |
sprinkle of salt |
Directions:
1. Preheat oven to 375°F/180°C. 2. Rub olive oil into a shallow pan. 3. Split the peppers in half lengthwise (keep the stem on) and scoop out all seeds and fibre. 4. Fill each pepper boat with 2 Tbs goat cheese. 5. Sprinkle liberally with toasted pine nuts. 6. Bake about 10-15 minutes or until the peppers are softened a bit (they should still be somewhat crisp) and the goat cheese somewhat melted. 7. Serve as appetizers, side dish or main meal. |
