This sandwich, combines some of my favorite foods: goat cheese, Kalamata olives, and fresh spinach! It's super easy & quick to make. I brought a tray of these to the family Christmas gathering this year and even the kids liked them! Read more !
Ingredients:
12 croissants (i bought a tray at costco)
2 pkgs goat cheese (again, the big packs that costco carries)
2 - 3 roasted red peppers from a jar, finely chopped
handful kalamata olives, finely chopped
fresh baby spinach, washed & dried, stems removed
sea salt and freshly ground pepper to taste
Directions:
1. Using a serrated knife, cut croissants open creating tops & bottoms.
2. In a medium bowl, use a fork to stir together cheese, peppers, olives, salt and pepper.
3. Spread bottom halves of croissants with cheese mixture.
4. Top with 2 layers of spinach and replace croissant top.
5. Cut into halves or thirds if serving on an appetizer tray.
