Magazine-restaurtant recipe, goat cheese and spiced cherries for this delcious spin on cheesecake- and I like any kind you know!!! Ingredients:
basic graham cracker crust for a 9 inch springform pan |
filling |
1 1/2 lbs cream cheese |
8 oz goat cheese |
1 cup sugar |
2 tbs flour |
3 large eggs |
2 tbs lemon juice |
topping |
4 cups fresh bing cherries |
1 cup sugar |
1/2 tsp cinnamon |
1/4 tsp allspice |
1/2 tsp ground ginger |
1/8 tsp salt |
zest of one orange |
2 cups fresh cherries pitted and halved ( i.e royal anne or rainier ) |
Directions:
1. Prepare a graham cracker crust and bake 10 mins 2. Make filling by combining cheeses and sugar in bowl wirth paddle attachmenat and beat low speed until smooth 3. Blend in flour a little at a time 4. Add eggs one at at a time and blend smooth 5. Add lemon juice 6. Pour filling into cooled baked crust 7. Smooth top of filling 8. Bake in a preheated 325F oven until edges slightly cracked and filling jiggles in center about 30 to 40 minutes 9. Remove from oven, cool completely and chill well until ready to serve 10. Make topping; 11. Place ingredients (except last 2 cups of fresh cherries ) in a saucepan and heat ove4 medium heat till cherries releases their juices 12. Cook and stir about 20 mins or until mixture has a thickeness of maple syrup 13. Set aside to cool 14. When cool fold in remaining 2 cups of cherries 15. Chill before serving 16. To serve: put cheesecake on platter and cover entire cake with cherry topping just before serving 17. Beautiful to look at, delcious to eat ! |
