Goat Cheese and White Bean Bruschetta |

These are a treat I like to bring to pot luck diners. Ingredients:
1 (15 1/2 ounce) can white beans, rinsed and drained |
5 plum tomatoes, seeded and coarsely chopped |
1/2 cup onion, minced |
1/2 cup basil, fresh, chopped |
3 garlic cloves, minced |
1 1/2 tablespoons balsamic vinegar |
4 tablespoons olive oil |
pepper |
1 loaf italian bread or 1 loaf french baguette, cut into 1/2 thick slices |
6 ounces mild goat cheese, softened |
Directions:
1. Preheat oven to 375 degree Fahrenheit. 2. In a medium sized mixing bowl, combine the beans, tomatoes, basil, garlic, vinegar and 2 tbsps olive oil. Season with pepper to taste. 3. Place bread on large baking sheet and brush with pastry brush using the remaining oil. Bake, watching closely, until bread is toasted and golden brown, about 8 to 10 minutes. 4. Remove bread from the oven and spread the softened goat cheese over each slice. Top with tomato bean mixture. 5. Serve immediately. |
