Goat Cheese And Sundried Tomato Salad

This is a very refreshing and tasty salad. Elegant and easy, the best kind to serve in a rush. Enjoy
Ingredients:
2 teaspoons spicy mustard
4 cups bibb lettuce cleaned and dried
2 tablespoons red wine vinegar
1/4 pound goat cheese
6 tablespoons vegetable oil
4 sundried tomatoes
1/2 teaspoon freshly ground black pepper
2 cups radicchio cleaned
Directions:
1. Make dressing by placing the mustard in a bowl and adding the vinegar.
2. Start beating with a wire whisk and add the oil slowly as you do then add pepper.
3. Divide dressing evenly between 2 bowls then put radicchio leaves into one of the bowls and toss.
4. Place the Bibb lettuce leaves in the other and toss.
5. Arrange a ring of radicchio around the outer edge of each plate.
6. Place Bibb lettuce in center then crumble cheese and distribute tomatoes and cheese over top.
