A great tasting spread to serve your family or guests. I found this one quite awhile back on the internet. Ingredients:
6 ounces plain low-fat yogurt |
8 ounces mild goat cheese (room temperature) |
2 teaspoons finely chopped fresh tarragon |
2 tablespoons trimmed and finely minced scallions |
2 tablespoons finely minced red onion |
kosher salt and freshly ground black pepper, to taste |
Directions:
1. Put a coffee filter in a strainer and place it over a bowl. Put the yogurt into the filter and let it drain over the bowl for either about an hour at room temperature, or a day in the refrigerator (I do mine overnight in the refrigerator). In a separate bowl, mash together the goat cheese, tarragon, parsley, scallions, red onion, and salt and pepper to make a smooth spread. When the yogurt is done draining, mix it in with the spread. If the spread is not being used, keep it in the refrigerator where it will last for about two days. |
