Adam at Men in Aprons came up with this easy to make delicious recipe and a gorgeous picture to go with it. It is a wonderfully light side to any meat or fish meal. Ingredients:
dry wild rice |
1/4 cup dried cranberries |
1/4 cup chopped walnuts |
dash each of salt and black pepper |
2-3 spoonfuls crumbled goat cheese |
1 tbsp butter |
Directions:
1. Cook about 1 cup wild rice according to package directions. 2. In the last minute of cooking, add the butter, salt, pepper, walnuts, and cranberries. 3. Mix well, and let sit for a few minutes. 4. Crumble on the goat cheese before serving. 5. That's it! Enjoy! |
