chicken Ingredients:
440 g chicken breast, meat only |
1/2 tsp turmeric |
15 g fresh coriander, chopped |
15 g fresh mint, chopped |
18 g minced garlic |
1/2 tsp black pepper |
1 tsp minced ginger |
1/2 tsp (3) cloves |
1/2 tsp sugar |
6 tbsp lime juice |
2 green chili peppers |
Directions:
1. Cut slits across the chicken breasts. Sprinkle with turmeric. 2. Put remaining ingredients into a food processor and blitz into a paste. Rub into the chicken and leave to marinade for 4 hours in fridge. 3. Pre-heat oven to 220c, wrap chicken in foil in marinade and place on a baking tray. Cook for 30 - 40 minutes or until chicken is white through center. |
