Ingredients:
4 whole(s) ripe avocados, cut in 1/2 cubes |
1 whole(s) lime - zested & juiced |
3 whole(s) plum tomatoes - cored & diced |
1/2 cup(s) red onion - finely chopped |
4 sprig(s) cilantro - sliced in ribbons |
1 teaspoon(s) cumin |
1/2 teaspoon(s) coriander |
1 pinch(s) sea salt |
1 pinch(s) black pepper |
cayenne pepper to taste |
2 tablespoon(s) olive oil |
4 bunch(es) mixed salad greens |
Directions:
1. In a large bowl, combines the cubed avocados with the lime zest and juice. Add the tomatoes, onion and cilantro. Mix gently and add the cumin and coriander. Next add the salt, pepper and cayenne to taste. Drizzle in the olive oil, toss again then cover and refrigerate for at least 2 hours. Place a handful of mixed greens on each plate and top with avocado mixture. |
