Gnocchi With Spinach and White Beans |

Potato dumplings with vegetables and beans. Ingredients:
1 teaspoon extra virgin olive oil |
2 cups gnocchi |
1 medium onion, thinly sliced |
2 tablespoons garlic |
1/2 cup water |
6 cups spinach, chopped |
1 (15 ounce) can diced tomatoes |
1 (15 ounce) can white beans |
1/2 teaspoon pepper |
1/2 cup part-skim mozzarella cheese, shredded |
1/4 cup parmesan cheese |
Directions:
1. Cook gnocchi according to package. 2. Heat olive oil and onion in a pan over medium heat for 2 minutes. 3. Stir in garlic and water. 4. Cover and cook until the onion is soft. 5. Add spinach and cook until starting to wilt. 6. Stir in tomatoes, beans and pepper and bring to a simmer. 7. Stir in the gnocchi and sprinkle with mozzarella and Parmesan. 8. Cover and cook until the cheese is melted. |
