Gnocchi With Gorgonzola Sauce |

This comes from a convenience cookbook I found in our library. It is certainly rich and not for the calorie counters. It is best served as a first course before a non-dairy meal. Ingredients:
1 lb prepared potato gnocchi |
6 ounces gorgonzola, sauce (you can substitute danish bleu) |
1/2 cup whipping cream |
2 cups fresh spinach |
Directions:
1. Cook gnocchi as per package directions and drain well. 2. In a saucepan over low heat, combine cheese and whipping cream. 3. Heat, stirring, until smooth - about 4 minutes. 4. Stir in spinach and cook until wilted - about 1 minute. 5. Toss with gnocchi and serve immediately. |
