This is a gluten free recipe from Cooking Free Ingredients:
1/4 cup canola oil |
2/3 cup light brown sugar |
2 eggs |
1 teaspoon vanilla extract |
1/2 cup applesauce |
1 3/4 cups gluten-free flour (4 flour blend) |
2 teaspoons baking powder |
1 teaspoon xanthan gum |
1/2 teaspoon salt |
1 1/2 g cinnamon |
1 1/2 cups grated zucchini |
1/2 cup chopped pecans (optional) |
1/2 cup raisins (optional) |
Directions:
1. Preheat oven to 350°F. 2. Grease 9x5 loaf pan. 3. Combine oil, sugar. 4. Add eggs, vanilla applesauce & beat. 5. Add flours, baking powder, xantham gum, salt, and cinnamon. 6. Stir in zucchini, nuts and raisins. 7. Bake for 1 hour. |
