Gluten Free White Chocolate Raisinets |

I use Enjoy Life chocolate chips. For a nut free chip, you can also try Vermont Nut Free Chocolates. Earth Balance works for a dairy free option. Make sure the cookies are small. I use a small melon baller which I fill level. Bigger cookies will spread. Ingredients:
1 cup rice flour |
1/2 cup tapioca flour |
1/2 cup potato starch |
1 cup brown sugar |
8 ounces butter |
1 cup chocolate chips |
1/2 cup white chocolate chunks |
1/2 cup raisins |
1 egg |
1 teaspoon baking soda |
1 teaspoon xanthan gum |
1/2 teaspoon salt |
Directions:
1. Soften butter. 2. Cream butter, egg and sugar. 3. Add soda, salt and xanthan gum. 4. Mix in flour. 5. Add raisins, chocolate and white chocolate. 6. Drop by teaspoonfuls onto a greased cookie sheet. 7. Bake for 8 minutes at 350. |
