Gluten-free Vegan Cole Slaw |

This mayoless cole slaw is made with apple cider vinegar. Sweet and tangy and super awesome. Ingredients:
1/4 cup olive oil |
1/3 cup cider vinegar |
2 t mustard (i like annie's horseradish mustard) |
2 t sugar |
1/2 head cabbage, shredded |
1 carrot, grated |
Directions:
1. Bring first 4 ingredients to a boil in a small saucepan. 2. Let cool. 3. Pour over veggies. 4. If you can, let this sit (covered) for a little while so the flavors can meld |
