This pairs nicely with baked fish or other shellfish. I use extra light olive oil for its mild flavor Ingredients:
1 cup brown rice |
1 navel orange |
4 kiwi fruits |
1 bunch green onion |
5 garlic cloves |
1/2 cup fresh cilantro |
6 tablespoons olive oil |
6 tablespoons brown sugar |
6 tablespoons red wine vinegar |
salt |
Directions:
1. Cook brown rice. 2. Zest orange and put in a large mixing bowl. 3. Slice orange, kiwi and green onions and add to bowl. 4. Mince garlic and chop cilantro and add to bowl. 5. In a separate bowl mix oil, sugar and vinegar. 6. Stir in rice and vinaigrette. 7. Serve room temperature. |
