I love these muffins because they are gluten free, filling and full of fiber. They satisfy the missing breakfast muffin from a gluten free diet without being too heavy or dry. Ingredients:
1/2 cup coconut flour |
1/2 teaspoon sea salt |
1 teaspoon baking soda |
4 eggs |
3 tablespoons coconut milk |
1/2 cup coconut oil |
1 cup coconut sugar |
1 tablespoon coconut extract |
1/4-1/2 cup shredded coconut |
Directions:
1. In one mixing bowl combine sifted coconut flour, salt, and baking soda. 2. In another mixing bowl, combine the eggs, coconut milk, coconut oil, coconut sugar, coconut extract. 3. Add the dry ingredients to the wet mix well but don't over mix. 4. Add shredded coconut and mix together. 5. Use a well oiled muffin tin and fill each one. Should make a dozen. 6. Bake at 375 degrees for 20-22 minutes. 7. Cool and enjoy. Can be frozen. |
