Gluten Free Sweet Biscuits For Shortcake |

Gluten-free, but tastes just like traditional Bisquick shortcake! From The Gluten Free Kitchen by Roben Ryberg. Ingredients:
1/3 cup shortening |
1/4 cup sugar |
1/2 cup potato starch |
3/4 cup cornstarch |
1/4 teaspoon baking soda |
1 1/2 tablespoons xanthan gum |
1 tablespoon baking powder |
2/3 cup milk |
1/2 teaspoon salt |
1/2 teaspoon vanilla extract, optional |
Directions:
1. Preheat oven to 375. 2. In medium bowl, cream shortening and sugar. Add remaining ingredients and mix until all lumps are gone. Batter will be quite soft and sticky. 3. Use dough to make 8 drop biscuits. Bake 12-15 minutes - I baked them much longer, until tops are very lightly browned. |
