Gluten Free Simple Bread (Atkins Friendly)

This is a low carb simple bread that is Atkins friendly with on 2.5 NC per slice
Ingredients:
1 1/4 cups almond meal
1/2 cup flax meal
1/2 tsp. salt
1/2 tsp. baking soda
3 eggs
1 tbsp. honey
1/2 tsp. apple cider vinegar
Directions:
1. In large bowl, combine almond meal, flax meal, salt and baking soda.
2. In medium bowl, whisk eggs, honey and vinegar.
3. Stir wet ingredients into dry.
4. Place into small (6X3 in) well greased loaf pan.
5. Bake at 350 for 30-35 minutes on bottom rack of oven; until toothpick comes out clean.
6. Makes 12 slices.
