Gluten-Free Prune and Pear Squares |

A different but complementary combination, these lightly spiced pastry squares are quick to make and very yummy! Ingredients:
2 cups all-purpose gluten-free flour |
1/4 cup butter |
1/3 cup sugar |
2 teaspoons gluten free baking powder |
2 eggs, well beaten |
2 tablespoons sour cream |
1/2 teaspoon salt |
1 lb prune, diced |
2 pears, peeled and sliced |
1 teaspoon vanilla |
1 teaspoon cinnamon |
2 tablespoons milk |
2 teaspoons cinnamon sugar |
Directions:
1. For dough, mix sugar, flour, powder and salt; cut in butter until crumbly. 2. Add eggs and sour cream; mix well and knead. 3. Divide dough into two equal portions and roll out one portion and put in a greased 9 x11 cake pan. 4. For filling, mix together all ingredients. 5. Spread filling evenly over dough. 6. Roll out remaining dough and cover filling with it. 7. For topping, brush top crust with milk and sprinkle with cinnamon sugar. 8. Bake in a preheated 350* oven for about 30 minutes. 9. Enjoy! |
