I made up this 1/2 recipe for my daughter, who is on the GFCF diet. This way, I don't waste the expensive gluten-free flour. You can make these as regular pancakes or add gluten-free chocolate chips or blueberries while cooking for a special treat. Ingredients:
3/8 cup gluten-free flour (such as bob's red mill) |
1/8 cup sweet rice flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 tablespoon sugar |
1/8 teaspoon xanthan gum |
1 teaspoon safflower oil |
1/4-1/2 cup water (to desired consistency) |
nonstick cooking spray |
Directions:
1. Combine all ingredients in small bowl. Mix well. Let stand for 5 minutes. 2. Spray medium heat griddle with cooking spray. 3. Pour scant 2 tablespoons batter onto griddle. 4. Turn when edges begin to dry. 5. Remove from heat when cooked through. 6. Serve with maple syrup, berries or dust with powdered sugar. |
