Gluten Free Pancake / Waffle Mix |

This is a recipe from that I have modified somewhat. I have not made pancakes out of this mix, but the waffles were light, fluffy and delicious. Ingredients:
1 cup brown rice flour |
3 tablespoons tapioca starch |
1/3 cup potato starch |
2 teaspoons white sugar |
1 1/2 teaspoons baking powder (gluten-free) |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon guar gum |
2 eggs (i use extra large) |
3 tablespoons canola oil |
1 cup almond milk (minus 1 tbsp) |
1 tablespoon lemon juice |
1 cup water |
Directions:
1. 1. Mix all dry ingredients together. 2. 2. Add wet ingredients and stir well. 3. 3. Mix will seem watery in consistency, but the recipe makes really fluffy waffles. |
