Gluten Free Lemon Poppyseed Pancakes |

This is the gf version of my favorite pancakes....well, next to the gingerbread ones, anyway. Ingredients:
2 cups of your favorite gf pancake mix |
1 cup sour cream |
1/2 cup milk |
1 tablespoon poppy seeds |
2 teaspoons lemon zest |
2 teaspoons fresh lemon juice |
2 eggs |
Directions:
1. Beat ingredients with wire whisk until well blended. Make pancakes as usual. 2. For syrup: Squeeze juice from one lemon and add to usual pancake syrup, stirring well. Perfect lemony syrup! |
