Gluten Free Lemon Poppyseed Pancakes

This is the gf version of my favorite pancakes....well, next to the gingerbread ones, anyway.
Ingredients:
2 cups of your favorite gf pancake mix
1 cup sour cream
1/2 cup milk
1 tablespoon poppy seeds
2 teaspoons lemon zest
2 teaspoons fresh lemon juice
2 eggs
Directions:
1. Beat ingredients with wire whisk until well blended. Make pancakes as usual.
2. For syrup: Squeeze juice from one lemon and add to usual pancake syrup, stirring well. Perfect lemony syrup!
