Gluten Free Gingerbread Pancakes |

Gingerbread pancakes used to be my favorite Christmas (and other times) breakfast. I adapted the regular recipe to a gf one. Feel free to substitute regular pancake mix and make your own normal gingerbread pancakes the easy way. Ingredients:
2 cups baking mix, pamela's ultimate or other gf pancake mix |
3 tablespoons sugar |
1 1/2 teaspoons cinnamon |
1 1/2 teaspoons ginger |
3/4 teaspoon allspice |
1/2 cup crystallized ginger |
2 eggs |
1 1/2 cups milk |
4 tablespoons butter, melted |
Directions:
1. In a bowl, whisk baking mix, sugar, spices and crystallized ginger. In separate bowl, beat eggs. Add milk and butter to eggs and mix well. Pour wet ingredients into dry ingredients and gently stir until just combined. 2. Cook on griddle. |
