1/4 cup amaranth flour
3/4 cup potato starch
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon baking soda
1 teaspoon baking powder
1/8 cup sucanat
1/8 cup applesauce
1/8 cup vegetable oil
1/2 cup molasses
1 egg, beaten
Directions:
1. combine dry ingredients,.
2. then add to wet.
3. Add about 1/4 cup of milk for consistency.
4. Bake at 350F for twenty minutes.
