An easy, filling breakfast bread. It tastes wonderful with a fruit spread. Ingredients:
1/2 cup margarine |
1 cup fruit, blended (such as strawberries or any mixture of fruit) |
2 cups rice flour |
1/2 cup sugar |
1/2 cup brown sugar |
2 eggs |
2 tablespoons baking powder |
1 dash xanthan gum |
1/8 cup nuts (or roasted edamame, sunflower seeds, etc) |
Directions:
1. Cream butter with sugar in large bowl. Beat in eggs, and fruit. Mix in flour & baking powder. Turn into 2 mini loaf pans, sprayed. Bake at 325 for one hour and 40 minutes until brown on top. |
