Gluten Free Cowboy Cornbread |

My family loves cornbread and since I must eat a gluten free this recipe has become our favorite. Everyone swears it's better than the original. Sometimes we mince up 1 or 2 jalapenos into this for a zesty version. Ingredients:
1 1/2 cups cornmeal |
1/2 cup rice flour (i use authentic foods brand) |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup milk |
2 eggs, beaten |
2 tablespoons vegetable oil |
2 cups sharp cheddar cheese, shredded |
1 cup frozen corn, thawed |
1 small onion, chopped small |
Directions:
1. Combine first 4 ingredients, mix well. Add milk, eggs, oil, stirring well. Stir in remaining ingredients. Pour into greased 9 inch square baking pan. Bake at 350 degrees for 40 to 45 minutes until lightly brown. Yield 9 servings. |
