This is a quick side dish that has great flavor
Ingredients:
1 cup skim milk
1 envelope plain gelatin
1 egg beaten
2 tablespoons mild olive oil
1 teaspoon xanthan gum
3/4 cup yellow cornmeal
1 cup gf all purpose flour mix
1/4 cup sugar (or honey if you prefer)
2 teaspoon non alumium baking powder
1/4 teaspoon seasalt
1/4 cup chopped green or red chili peppers (optional)
1/4 cup grated cheese (optional as well)
Directions:
1. Heat oven to 400 degrees
2. In Kitchen-aid mixing bowl add milk and bloom plain gelatin for 5 minutes
3. Add remaining ingredients and beat on low for about 1 minute
4. turn up to high speed and let mix a minte until thick
5. turn batter into heated and buttered 9 inch cask iron skillet
6. bake at 400 degrees for 22 minute or until a fork comes clean
7. Let cool for 5 minutes cut into 8 pieces and serve
