Gluten-Free Coffee Fingers |

These crisp cookies are light with a slight coffee flavour. Ingredients:
1 cup butter, softened |
1/2 cup brown sugar |
3 tablespoons icing sugar |
1 teaspoon instant coffee granules |
1 egg yolk |
1 cup sweet rice flour |
1/2 cup potato starch |
1/2 cup light stoneground buckwheat flour |
2 (1 ounce) semi-sweet chocolate baking squares, melted |
Directions:
1. Measure first 5 ingredients into a mixing bowl and stir. 2. Add flour and mix well. 3. Roll 1/2 thick on a lightly floured surface and cut into finngers 1/2 x2 . 4. Place on a greased cookie sheet and bake in a preheated 300* oven for 20 to 25 minutes. 5. When cooled, dip ends into melted chocolate. 6. Enjoy! |
