Absolutely ADORABLE, these are like mini, bite-sized cinnamon buns! Ingredients:
1 cup butter, softened |
4 ounces cream cheese, softened |
3/4 cup sugar |
1 egg |
1 teaspoon vanilla |
1 1/4 sweet rice flour |
1/2 cup potato starch |
1/2 cup light stoneground buckwheat flour |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 tablespoons melted butter |
1 teaspoon cinnamon |
1 tablespoon brown sugar |
Directions:
1. Cream butter, cream cheese, and sugar together well. 2. Beat in egg and vanilla. 3. Sift in flour, baking soda, and salt together; add and mix well. 4. Add milk if dough is too dry. 5. Roll dough 1/4 thick into a rectangle about 9x13 . 6. Brush with melted butter and sprinkle with cinnamon and brown sugar. 7. Beginning at long side, roll up. 8. Chill for 30 minutes. 9. Slice 1/4 thick and arrange on greased baking sheet. 10. Bake in a preheated 350* oven for 10 to 12 minutes. 11. Enjoy! |
