A sweet, rich cookie loaded with chocolate and butterscotch chips. Enjoy Life makes a great allergen-free chocolate chip that you can get at Whole Foods. Bob's has gluten free oatmeal. Substitute Earth Balance for the butter if you can't have dairy. Ingredients:
1/2 cup rice flour |
1/4 cup potato starch |
1/4 cup tapioca flour |
1 cup brown sugar |
1/2 cup oatmeal |
1/2 cup butter |
1 egg |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon xanthan gum |
6 ounces chocolate chips |
6 ounces butterscotch chips |
1 teaspoon salt |
Directions:
1. Cream butter, sugar and egg. 2. Add dry ingredients. 3. Drop by teaspoonfuls onto a greased cookie sheet. 4. Bake at 350 for 8 minutes. |
