Gluten Free Chocolate Chip Cookies |

I saved this from a magazine clipping for my aunt who can't eat any gluten. Ingredients:
3/4 cup soya flour |
1/4 cup potato starch |
1/2 teaspoon salt |
6 1/2 tablespoons margarine |
6 tablespoons white sugar |
6 tablespoons brown sugar |
1/2 teaspoon vanilla |
1 egg |
1/2 cup semi-sweet chocolate chips |
1/2 cup chopped nuts |
Directions:
1. Sift dry ingredients. 2. Beat sugars and margarine. 3. Add egg and beat again. 4. Add vanilla and stir. 5. Add dry ingredients. Add chips and nuts. 6. Drop by spoonful onto greased cookie sheet. Bake at 375°F for 10 to 12 minutes. 7. 1 cookie - 1 fruit/vegetable choice, 1 fat. |
