Great celiac-friendly afterschool snack or breakfast-on-the-go. Ingredients:
1 cup rice flour |
1/2 cup cornstarch |
1/2 cup sugar |
1 1/2 teaspoons cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
3/4 teaspoon guar gum |
1 cup applesauce |
1/2 cup canola oil |
1/4 cup rice milk |
1 egg |
Directions:
1. Preheat oven to 400 degrees Farenheit and line 12-cup muffin pan with paper liners. 2. Combine all ingredients in large mixing bowl; mix just until blended. 3. Divide muffin batter evenly in prepared pan. 4. Bake for 12-18 minutes or until toothpick inserted in center of one muffin comes out clean. |
