Gluten Free Blondie-nut Bars |

A chewy, nutty and caramelly bar cookie that will take your tastebuds to high heaven. Treat yourself or your gluten-free friends to this delicious creation. Ingredients:
1/2 c stick margarine |
2/3 c brown sugar, packed |
1 tsp vanilla |
5 oz lite silken tofu, pureed |
1c brown rice flour |
1/2 c defatted soy flour |
2 tsp baking powder |
1/4 tsp sea salt |
1 c chopped hazelnuts |
2/3 c toffee bits |
Directions:
1. Preheat oven to 350F. Grease a 9x13 pan. 2. Cream margarine, sugar, vanilla and tofu puree. 3. Add dry ingredients and mix well. (Dough should be pretty smooth, but thick) 4. Fold in nuts and toffee bits. 5. Bake for 15-20 minutes. 6. Cool and enjoy! |
