A handy mix for muffins or cakes. To make cakes, just add more sugar.
Ingredients:
1 1/4 cup rice flour
1 cup barley flour
1/2 cup tapioca flour
1 tsp baking soda
1 tsp salt
1 tsp xanthan gum
1/3 cup sugar
Directions:
1. Mixx all ingredients together and store in airtight container.
2. To make muffins:
3. Mix 1 cup of muffin mix with 2 eggs, 1/2 tsp vanilla, 2 tbsp vegetable oil, 1/3 cup non-dairy milk (or water or juice)
4. Beat until smooth
5. Add fruit, nuts etc.
6. Bake at 375F for 15 minutes
