dry white beans, canola oil, garlic, onion, green chilies, cumin, red pepper flakes, chicken broth, water, tomatillos or green tomatoes, cilantro, lime juice, chicken breast, light sour cream cvt Ingredients:
2/3 cup dry white beans |
2 t. canola oil |
3 t. garlic, minced |
1 cup onion, chopped |
4 oz. chopped green chilies |
1 1/2 t. ground cumin |
1 1/2 t. red pepper flakes |
2 cups fat free, reduced sodium chicken broth |
1 cup water |
1 cup tomatillos or green tomatoes, chopped |
1/2 cup chopped cilantro |
1 t. lime juice |
3 oz. (roasted skinless) chicken breast, diced |
1/2 cup light sour cream |
Directions:
1. Soften beans by covering with cold water in a saucepan; bring to boil for 2 minutes and let stand for 1 1/2 hours; drain. 2. In a large saucepan, heat oil with garlic and onion; saute for 3 minutes. Add chilies, cumin, and red pepper; continue to saute for an additional 5 minutes. 3. Add beans, chicken, broth, water, and tomatillos. Heat until beans are tender (about 1 hour). 4. Add cilantro and lime juice. 5. Serve topped with light sour cream. |
