Glazed Pearl Onions

A new Thanksgiving favorite. Sooo much better than the traditional creamed onions that no one really eats. These are devoured quickly and are a real show stopper!
Ingredients:
2 lbs pearl onions
3 tbl of butter
2 tbl red currant jelly
2 tsp sugar
1/4 tsp salt
Directions:
1. In a deep 12 inch skillet, heat onions and 1 inch of water over high heat
2. Reduce to low and simmer for 8 – 10 minutes or until onions are just tender
3. Drain, cool onions under cold running water and drain again
4. Peel onions leaving a bit of root end to hold shape (skins will slip off easily)
5. Wipe skillet dry
6. In the same skillet cook onions and remaining ingredients over medium to medium high ,stirring and shaking skillet often, until onions are glazed and caramel in color, about 3 – 5 minutes
