Glazed Medallions With Mushrooms |

What a tasty dish this is!! I love steak and mushrooms anyway, so this is right up my alley - I served it with grilled veggies, served with a little of the sauce mixture over them, so good!! Ingredients:
3/4 cup diana original sauce |
2 tablespoons fresh lemon juice |
4 garlic cloves, minced |
3 green onions, thinly sliced |
1 teaspoon crumbled dried rosemary |
1 1/2 lbs mushrooms, assorted (such as button, cremini, portobello, shiitake or oyster) |
1 sweet onion, cut into wedges |
salt and pepper |
2 tablespoons butter |
1 1/2 lbs beef, strip loin grilling medallions 1-inch thick (about 6) |
Directions:
1. Combine Diana sauce, lemon juice, green onions and rosemary in bowl. Remove 1/4 for basting. 2. Cut mushrooms into large chunks, keeping oyster mushrooms whole. Toss with onion, and salt and pepper to taste. Pan-fry in butter in nonstick skillet over medium heat for about 12 minutes or until slightly caramelized and liquid has evaporated. Stir in Diana sauce mixture; heat through. 3. Meanwhile season medallions with salt and pepper to taste. Grill over medium-high heat for 5-6 minutes per side for medium -rare, brushing with reserved sauce occasionally. Let stand for 5 minutes. Serve each topped with pan-fried mushrooms. |
