This is the absolute best meatloaf I have ever tasted. I have never been a fan of meatloaf, but honestly I could eat this one everyday. It was submitted by a woman named Bonita. She doubles the glaze, and trust me. you will want to as well. It's a real treat. Just make sure you drain as much of the liquid as you can before you put the glaze on top. Ingredients:
2 eggs, beaten |
2/3 cup milk |
2 teaspoons salt |
1/4 teaspoon pepper |
3 slices bread, cut into small pieces (or you can use bread crumbs) |
2/3 cup carrot, shredded (cheese grater works great for this) |
2/3 cup onion, chopped |
1 1/2 cups shredded cheddar cheese |
2 lbs hamburger meat |
1/4 cup brown sugar |
1/4 cup ketchup |
1 teaspoon mustard |
Directions:
1. Stir together eggs, milk, salt, pepper and bread. 2. Add carrots, onion, cheese and hamburger and mix well. 3. Form into loaf. 4. Bake at 350 degrees for 1 hours. 5. Meanwhile, combine brown sugar, ketchup, and mustard. Mix well. 6. When the hour is up, drain liquids and spread brown sugar, ketchup and mustard mixture over the meatloaf and bake 15 min longer. |
