A must try for lemon lovers! Ingredients:
1/2 cup softened butter |
1 cup sugar |
2 eggs |
2 tablespoons fresh lemon juice |
1 tablespoon grated fresh lemon rind |
1 1/2 cups flour |
1 teaspoon baking powder |
1/8 teaspoon salt |
1/2 cup milk |
2 tablespoons fresh lemon juice |
1/2 cup confectioners' sugar |
Directions:
1. Cream butter and sugar, then beat in eggs, lemon juice and lemon rind. 2. Combine flour, baking powder and salt and stir into creamed mixture alternately with milk. 3. Pour into greased 8 x4 loaf pan. 4. Bake at 350° for 45 minutes or until done. 5. Combine glaze ingredients. 6. Remove bread from pan and immediately drizzle with glaze, then cool on a wire rack. |
