So delicious AND nutritious - and very good for an appetizer served with Cheesy Ham and Apricot Toasts, Smoked Salmon Cocktail Potatoes and Shrimp and Roasted Red Pepper Canapes. This dish just completes the appetizers - Ingredients:
1 cup plain yogurt |
1/4 cup strawberry jam |
1 teaspoon mint, very finely chopped |
2 cups seedless watermelon, cubed |
2 cups golden pineapple, cubed |
2 granny smith apples, cored and cut into bite-size pieces |
2 tablespoons lemon juice |
1 cup green seedless grapes (or a combination of both) or 1 cup red grapes (or a combination of both) |
1 tablespoon liquid honey |
1 pinch ground cardamom or 1 pinch cinnamon |
Directions:
1. Place yogurt in a coffee filter-lined sieve set over a bowl. Refrigerate 4 hours to drain. Discard the liquid (whey). Gently blend thickened yogurt with jam and mint until well combined. Cover and refrigerate for up to 1 day. 2. Thread equal portions of watermelon, pineapple, grapes and apple onto 24 (6-inch) bamboo or metal skewers. 3. Stir lemon juice with honey and cardamom or cinnamon. Arrange skewers on a platter; brush all over with the honey mixture. Serve immediately with the dip. |
