What to do with leftover dughnuts like Kripsy Creme,? this is a delish bread pudding.! Ingredients:
9 glazed doughnuts, day old ( krispy kreme is good ) |
2 large eggs |
2 egg yolks |
1/2 cup sugar, plus |
1 tablespoon sugar |
1 teaspoon vanilla |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
3 cups whole milk |
vanilla sauce |
1/2 cup whipping cream |
1/2 cup milk, plus 2 tablespoons milk |
1/4 cup sugar |
1 tablespoon cornstarch |
3 tablespoons butter |
1 1/ 2 teaspoons pure vanilla extract |
1/2 teaspoon nutmeg |
Directions:
1. Butter a 2-quart baking dish and set aside. Cut doughnuts into 1/2-inch cubes and spread evenly in baking dish. 2. In a bowl, whisk together remaining ingredients and pour over doughnuts. 3. Let rest 1 hour. 4. Preheat oven to 350 degrees. 5. Make a water bath for the pudding by placing the baking dish in a shallow, ovenproof pan. 6. Fill pan with warm water. 7. Place in oven and bake for 70 to 75 minutes; center should be firm. 8. Serve warm or cold. 9. Sauce: 10. scald the cream, all but 1/4 cup milk, sugar and salt in a saucepan. 11. Dissolve the cornstarch in the remaining 1/4 cup milk in a small cup. 12. Stir it into the cream mixture. . 13. Bring the mixture to a boil over low heat, whisking constantly. 14. Continue boiling and whisking until the sauce thickens, about 3 minutes. 15. Remove the pan from the heat and stir in butter, vanilla and nutmeg. 16. Allow the sauce to cool slightly before serving. |
