1/3 cup butter or margarine softened |
1/3 cup granulated sugar |
1/3 cup packed light brown sugar |
1 egg |
1 1/4 tsp vanilla extract |
1 1/3 cup all purpose flour |
3/4 tsp. baking powder |
1/4 tsp baking soda |
1/4 tsp salt |
2 tbsp. milk |
1 1/4 cups coarsely chopped fresh cranberries |
1/2 cup coarsely chopped walnuts |
2/3 cup hersheys vanilla milk chips |
vanilla glaze |
1 cup hersheys vanilla milk chips |
2 tbsp vegetable oil |
Directions:
1. Heat oven to 350 2. Lightly grease or paper line small muffin cups 3. In small mixer bowl beat butter, granulated sugar, brown sugar, egg and vanilla till light and fluffy 4. Stir together flour, baking pwoder, baking soda, and salt: 5. Gradually mix into butter mixture. 6. Add milk 7. Stir until blended. 8. Stir in cranberries, walnuts and vanilla milk chips 9. Fill cups about 7/8 full with batter 10. Bake 18-20 min. or until wooden pick inserted comes out clean. 11. cool 5 min. remove to wire rack to cool completely 12. Vanilla Glaze 13. in small microwave-safe bowl place vanilla milk chips, sprinks oil over chips. 14. microwave on high 30 seconds, stir vigorously. 15. If necessary microwave an additional 30 seconds until chips are melted when stirred. 16. Drizzle over top of mini cakes refrigerate 10 min to set glaze |
