Oh yum. I wasn't sure about this recipe when I got it from my mom. But it is very good. Ingredients:
1 lb carrot (scrubbed, peeled and cut in strips or slices) |
salt and pepper |
1/2 cup orange marmalade |
1/4 cup butter |
1 tablespoon mint jelly |
Directions:
1. In a saucepan, cover carrots with water; add salt and pepper to taste. 2. Cook until barely tender; drain. 3. Melt butter with marmalade and jelly, stirring until all are blended. 4. Add carrots and cook together for a few minutes. |
