A delicious way of preparing and serving carrots. Ingredients:
3 1/4 lb carrots |
as needed --- water see note in directions |
2 1/2 oz butter |
1 tbsp sugar |
1 tsp salt |
to taste --- white pepper |
as needed --- chopped parsley |
Directions:
1. Trim, peel, and slice the carrots. 2. Place them in a saucepan or straight-sided sauté pan. 3. Add water to barely cover the carrots. 4. Add the butter, sugar, and salt. 5. Bring to a boil. 6. Lower heat and simmer until the carrots are tender and the water is nearly evaporated. 7. If done properly, these should happen at the same time. 8. Toss the carrots so that they are well coated with the glaze that is left in the pan. 9. Garnish with chopped parsley. 10. =================================== 11. NOTE: 12. Sometimes Vichy water or other bottled mineral water is used, but it is not necessary. |
