This recipe would be a fantastic side dish to any type of meat. Ingredients:
4 large tomatoes (cut in half or 1/2 inch slices) |
3 tablespoons mayonnaise |
1 teaspoon dijon mustard |
2 tablespoons fresh flat-leaf parsley, finely chopped |
2 teaspoons fresh chives, finely chopped |
salt & freshly ground black pepper |
3 tablespoons parmesan cheese, freshly grated |
Directions:
1. Preheat the oven to 400 degrees. Place the tomatoes cut side up in a medium baking dish. 2. In a small bowl, stir together the mayo, mustard, 1 tablespoons of the parsley, the chives, salt and pepper to taste and 2 tablespoons of the parmesan cheese. Spoon a heaping teaspoon of the mayo mixture on each tomato and spread to cover. Sprinkle the tomatoes with the remaining 1 tablespoons cheese. 3. Bake for 10-12 minutes, or until hot. Turn on the broiler and broil the tomatoes until brown and bubbling, about 2-3 minutes. Sprinkle with the remaining 1 tablespoons parsley and serve immediately. |
